Light Roast vs Dark Roast

The roast level shapes almost everything you taste — here's how the two ends of the spectrum differ.

Roast level is one of the biggest levers in how your coffee tastes, and light vs dark sit at opposite ends of it. The difference comes down to how long the beans were roasted — and that one variable changes the flavor, the body, and (contrary to popular belief) barely touches the caffeine.

Light roast — bright, clean, and origin-forward

Light roasts are pulled from the roaster earlier, so they keep more of the bean's original character. Expect brighter, cleaner flavors — think citrus, berry, floral, or tea-like notes — with a livelier acidity and a thinner, more delicate body. If you want to taste where the coffee came from, go light.

Dark roast — bold, deep, and roasty

Dark roasts stay in longer, which develops oils on the surface and trades the bean's subtle notes for deep, bold, roast-driven flavor — chocolate, caramel, smoke, a pleasant bittersweetness. The body is fuller and richer thanks to those oils. This is the classic, comforting "coffee" taste many people grew up on.

The caffeine myth, settled

Here's the fun part: dark roast is not automatically stronger in caffeine. Measured by weight, light and dark are nearly identical (light is a hair higher). The confusion comes from volume: roasting drives off water and puffs the beans up, so dark beans are larger and lighter. Scoop by scoop, you fit more of the denser light-roast beans in, so a scooped light roast can actually deliver slightly more caffeine. Either way, the difference is small — roast for flavor, not for a caffeine edge.

Which should you order?
